CRANBERRY & WHITE CHOCOLATE COOKIES

  This sweet, soft, super easy and yummy cookie is something just a little different for your cookie jar. Dried cranberries and white chocolate are a GREAT combination!! 1/2 cup butter (room temperature) 1/4 cup cream cheese (room temperature) 3/4 cup brown sugar 1/4 cup powdered sugar 1 egg (room temperature) 1 tablespoon vanilla 2 1/2 cup all purpose flour 2 teaspoons corn starch 1 teaspoon baking soda 1/2 teaspoon kosher salt 1 cup dried cranberries 2 cups white chocolate chips (divided) Beat the room temperature butter and room temperature cream cheese on high 3 minutes (stand mixer works best for this recipe) Turn mixer to low and add the egg and vanilla. Beat one more minute. Add the flour, cornstarch, baking soda and salt. Mix on low for 1 minute. Fold in 1 cup of dried cranberries, this is what I use: Fold in white chocolate chips. This recipe calls for 2 cups of white chocolate chips. I hold back a handful or so, to use as "decorations" on top of each unbaked cookie...

EASY KOLACHE COOKIES

There are many different styles (and spellings) for Kolache cookies; some are made with yeast, some made with cream cheese, some are round, some are rolled up. This recipe is a cream cheese and butter crust that bakes up  light as air and  flaky and sweet . Instead of using dried fruit (like some recipes call for), it uses jam (any flavor you like) They are truly delicious and look SO PRETTY on any cookie tray. 2  1/4  cups all purpose flour 1  cup butter at room temperature 8  ounces full fat cream cheese at room temperature 1 teaspoon vanilla 1/4 teaspoon salt Mix flour and salt and set aside. NOTE: If you are using UN salted butter, increase the salt in this recipe to 1/2 teaspoon.  In a stand mixer, beat the room temperature butter + the room temperature cream cheese + sugar and vanilla on medium high speed for 3 minutes. BEST CHOCOLATE CHIP COOKIE EVER

I have been making chocolate chip cookies for 45+ years; lets just say I've tried a zillion recipes, but THIS recipe beats them all, HANDS DOWN!!! Some chocolate chip cookie recipes have great flavor, but produce a flat cookie that spreads all over the cookie sheet (I hate that, don't you?). Some recipes produce a picture perfect cookie, but it doesn't have that wonderfully chewy texture and buttery flavor that a good chocolate cookie needs. Well, I'm here to tell you that THIS recipe will give you BOTH, a perfectly shaped cookie AND one that is totally delicious. One word of caution: this cookie dough is very stiff. PINEAPPLE WHIPPED CREAM DRESSING

When I was a kid, my mother, bless her heart, made (what she called) fruit salad on special occasions . Her idea of fruit salad was a can of drained fruit cocktail with a little Dream Whip stirred in; if it was a very special occasion , she added a banana. When I started cooking, a good fruit salad was one of the things I wanted to learn how to make.   This pineapple whipped cream is super light, fluffy and creamy, it would be great on just about anything (I plan on using it on pound cake). I also have plans for substituting orange juice for the pineapple juice and making an orange flavored whipped cream. TONS of possibilities here! 1/4 cup pineapple juice 1/4 cup fresh lemon juice 2 eggs (well beaten) 1/4 cup sugar 1 cup whipping cream 1/4 cup sugar  (if necessary - see note) Beat the eggs until smooth, then stir in sugar and juices.
